I got to watch my neighbor, Joseph, roast his pig, cut it up and everything. I found it all very fascinating. I am sure it's very different than how we do things at meat processing plants/factories in America. His older son, Andrew, helped him with the process. It went by very quickly. I am sure this is not his first or last pig to roast either. Soon enough his sons will be roasting their own pigs just like he does.
